This recipe is so simple it hurts, in fact it’s more just like a piece of advice rather than a recipe it self! How many of you always boil your sprouts? I mean, it’s just what you do. Years and years and years (well.. I’m really not that old.. but as long as I have been alive for) I’ve always had my sprouts boiled, or very occasionally, steamed. I just assumed that’s what you did with them and so whenever I made them I done the same. Until now that is!
It wasn’t until a couple of weeks ago that I’d even heard of roasting them and if I’m perfectly honest I’m not even sure where I heard it.. although I suspect it was when I was nursing a hangover and watching Sunday Brunch on tv. Its so simple, requires nothing more than what you would have already and wow, what a huge difference it makes.
Don’t get me wrong, I love sprouts boiled or steamed, but roasting them just brings out so much flavour in them! Especially useful if your kids aren’t so keen as the roasting seems to take out some of the bitterness.
Vegan
500g Sprouts
2 Tbsp Groundnut Oil, or any other oil of your choosing (although I’m not so keen on olive oil for this)
Sea salt and freshly ground black pepper
- Pre-heat your oven to 200c, put the oil in a large heavy roasting dish and pop it into the oven whilst it’s pre-heating.
- Prepare your sprouts (unless you were crafty and bought the pre-prepped ones) by chopping off the bottoms and peeling off the outer layer, give them a good wash and dry them thoroughly before chopping them in half.
- When the oven is up to heat very carefully remove the roasting dish, using a large serving spoon put the sprouts into the pan – using a spoon will prevent any nasty splashing of hot oil – sprinkle a liberal amount of salt and pepper over the sprouts and mix well to evenly coat in the oil and seasoning. Pop the dish back into the oven and roast for 35-40 minutes, or until the sprouts turn golden round the edges, leave them in longer if you like them really crispy!
- Just before serving sprinkle with a little coarse sea salt and freshly ground pepper.
